Soft Shell Crab Too Large -- Cut in half

My daughter and family came to visit and brought me a soft shell crab that they purchased on their way out of town.  Since they moved over across the bay bridge, they have access to some fresh seafood items that I can't easily get here in the BToS.

The crab hadn't been cleaned yet and looked to be on the large side compared to fried soft shell crab sandwiches that I'd had in the past at local restaurants.  When I got around to cleaning it, I decided it might be more enjoyable if I removed the top shell section and cut it in half.  I dipped 'em in some egg/milk wash and flour and deep fried.

Above is foto of the two half-soft shell crabs on large burger buns with some tartar sauce.  Needless to say, I managed to woof 'em down and they were a delicious dinner by themselves.

PS - I can hear you now, "Orange counter tops!  When's this guy gonna upgrade his kitchen!"  They're only about 35 years old...some old farts never change.
